moroccan chicken with potato tomato tart
served with cucumber salad with yogurt dill dressing (a la rita).

chicken salad with oranges and dried cherries (a la rita)
adapted from this recipe:
smoked chicken salad with onions and dried cherries
4.5 cups diced smoked chicken
1.5 cups diced celery
2.25 cups diced onions
2.25 cups dried cherries
1 cup minced fresh basil
2 cups mayonnaise
1 tsp orange zest
3 tbsp fresh orange juice
salt and pepper to taste
place all ingredients in a mixing bowl and stir gently until well combined. refrigerate until ready to serve.
12 servings.
